Stag Bán

Stag Bán 

Style: Pale ale, ABV: 4.5%

Stag Bán is our first beer, primarily it’s an easy going beer brewed at lower temperatures to create a cleaner profile. The malt profile is an uncomplicated design to give some body to the beer without it being heavy or cloying.

Stag Bán contains a healthy dose of modern and classic hops expected of the style. First Gold,  Summit, Admiral and Cascade hops combined in this luscious beer causes the slight orangy citrus aroma that eventually transforms into a beautiful floral character. The spicy dry fresh finish of Stag Bán is formed by the EKG added in the background. We recognise First Gold as an awesome hops which is greatly undervalued.

Stag Bán ABV is 4.5% which means you can enjoy a couple of pints without going overboard, we designed this beer with summer in mind, it’s not a hop bomb, an IPA, double or tripple, the IBU is in fact under 30. This is about balance.

Stag Rua

Stag Rua

Style: Irish Red Ale, ABV: 4.2%

Stag Rua is a beer with big malt flavours and it’s our impression of a perfect Irish Red Ale.  The body is moderate meaning it’s not a heavy beer with an ABV of 4.2%. The flavour profile of Stag Rua is full of irresistible chocolate, caramel and toffee characteristics. These are derived from liberal use of chocolate and crystal malts beside the gorgeous Irish ale malt. No one ingredient takes over the beer, more of a depth of layers which reveal themselves slowly. With a grain bill like this nothing else can be expected but a deep ruby red colour, it gives a little insight into what lays ahead after pouring.

Stag Rua has an aroma that is rich and malty with little hops, although we use a considerable amount of hops their presence is behind the malt but there none the less. It will pour with a off white rocky head and should last all the way down the glass leaving a lacing behind. Stag Rua, an Irish Red Ale is a favourite style of our head brewer and we hope you enjoy drinking it as much as we love it.

Black Lightning

Black Lightning

Style; Black IPA , Black India Ale. ABV; 6.5%

Q Awards WinnerThis Black IPA is triple hopped with huge hop volumes of all the American C’s expected of the style. The malt is in the back seat for this one, as there is enough dark malt to give colour and a limited roasty flavour with no malt astringency. Black Lightning is hopped from the mash to the fermenter. We use Willamette, Chinook, Cascade, Summit and Centennial hops in very large volumes, about 100% more than a regular beer, but we don’t make it too bitter. Black Lightning is 56 IBU and the water profile is adjusted to make the hops seem more rounded rather than sharp and harsh which can easily happen when using so much hops.

Black Lightning will pour with a big rocky creamy head and it looks like a stout but once you come close to an opened bottle the aroma will tell you it could not be further from one. Black in colour with slight dark malt qualities but in other senses it’s a big American style IPA.

As the two brewery owners; Don O’ Leary and Gordon Lucey are both keen bikers, this is a nod to the 1952 Vincent Black Lightning bike. The Vincent Black Lightning bike was well ahead of it’s time. When all around had about 12 or 14 horsepower, this beast packed 70 odd in it’s big V Twin. As well as that, the whole Saint thing would not sit well with this branding so for this one we veered a little.

Style; Gluten Free Pale Ale 4.5%ABV

A Gently hopped pale ale using Irish lager malt to give a light body beer but still retaining a hop flavour and aroma of a typical Irish pale ale.

Gluten Free Stout, ABV: 4.2 %

This is a double chocolate and Madagascan vanilla stout, Irelands first gluten free stout and this version is bursting with chocolate, we use a lot of organic cacao nibs and the best vanilla available, smooth and silky.

Gluten Free IPA, ABV: 5 %

A Classic IPA, using vast quantities of new age hops this gluten free IPA is full of flavour. Hop usage is late in the boil which gives big flavours and aroma without big bitterness. A well balanced quaffable IPA.

Gluten Free Red Ale, ABV: 4.2 %

Irish red ale but gluten free, this is a malty layered beer with depth in flavour. Irresistible toffee and caramel flavours with a medium body, at just 4.2% and a lower carbonation level this is a very sessionable beer.

Stag Saor ,  Kolsch Style

Style; Gluten Free Kolsch Style Lager, ABV; 4.2%

This is what “Saor” (the white and silver label) used to be, same great award winning beer but it now shares the name, now called Stag Saor Kolsch Style.

Stag Saor Kolsch Style has a gentle hop and malt character, brewed with German Nobel Hops, Premium Irish and German Malt and German Yeast which sees extended cold lagering resulting in an easy going crisp and refreshing beer to be enjoyed by everyone. Gluten Free Beers

Black Lightning

Lon Dubh

Style; Irish Stout, ABV; 4.2%

Lon Dubh is a medium bodied traditional dry Irish stout at 4.2 % ABV. It is designed to appeal primarily to traditional stout drinks, who remember how creamy the pints used to be. The complex recipe we developed brings back to life characteristics that are long forgotten.

The appearance is jet black with a thick and cream like, long lasting ivory coloured head. The flavours are of moderately roasted grains and a low hop bitterness balanced by a small malt sweetness. With the malt bill leaning towards chocolate malts than roasted barley leads to a softer and less astringent stout. The aroma profile is as expected of a dry Irish stout with a coffee and roasted grain aroma along with subtle hints of vanilla.

The combination of the medium body, low carbonation and low hop bitterness makes Lon Dubh a dangerously drinkable stout that tastes every bit as gorgeous as it looks. We promise you as you enjoy a pint of Lon Dubh you will agree with us when we call it the Smoothest Stout in Ireland.
